Our Story

Our Story

After 25 years in winemaking, David sought a new challenge. 10 years ago, he bought his first still and began experimenting in his shed—think “Breaking Bad,” but with a focus on spirits. In 2016, and now with a state-of-the-art 8-stage Column Still (affectionately named “Meg” after David’s wife), a trained palate, and a passion for innovation, David crafted a range of white spirits, including Gin, Vodka, and a White Rum, all rich in flavour, depth, and character. Perfect for sipping or mixing, our spirits are designed to elevate any occasion.

In 2019, the first batch of single malt Whisky was crafted from a local brewhouse and put to a 40-year-old Portuguese Port barrel. The intervening COVID years, saw an increase in its production as well as crafting of a small batch Rum from Black Strap molasses. Now with a 5-year-Old Whisky & 4-year-Old Rum in bottle, we are starting to expand the range for the more discerning palate.

 

Next came the challenge of creating a brand and bringing our spirits to market. Enter Krisdianne, whose extensive experience in the wholesale and retail sectors of the wine industry proved invaluable. With a wealth of contacts across Victoria and a talented design team (shoutout to Kelly Charles, EPIC and Paul Kelly Creative), we were ready to take the leap.
